Add amaranth seeds to water in a saucepan and bring the mixture to simmer for 7-10 minutes
Add the finely chopped dates to cooked seeds and continue to cook for another 5 minutes.
At this stage, add more water if required. Then, add cardamom powder and oil and cook it further on a medium heat until everything comes together and most of the water has dried up.
Add the chopped almonds; mix well and turn off the heat. Set the saucepan aside and allow the mixture cool down completely.
Now, to make the ladoos, grease palms with a little bit of oil, roll sweet amaranth seeds mixture between palms to make little balls.
